Ham croquettes with mustard sauce

Accord : Versant Blanc

Ingredients:

  • 1 cup chopped ham

  • 1 1/2 cups mashed cooked potatoes
  • 1/2 cup crumbled white bread moistened in 1/2 cup milk 
  • 2 green onions, chopped 
  • 1 egg
  • 1/2 tablespoon wholegrain mustard 
  • 1/2 tablespoon dijon mustard
  • 1/2 tablespoon honey
  • 1 tbsp. dill or fresh coriander 
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Mustard sauce 
  • 1 cup mayonnaise
  • 1 tablespoon dijon mustard
  • 1 tablespoon wholegrain mustard 
  • 1/2 tablespoon honey
  • 1 tbsp. dill

    • 1 cup seasoned Italian breadcrumbs 

    • 1 cup canola oil for frying

     

    Instructions :

    Place the crumbled white bread in the milk and soak for 15 minutes, pressing well afterwards to remove the milk and keep the bread soaked.

    Mix ham, potatoes and bread with milk, green onions, mustard, honey, dill, salt and pepper.

    If the mixture is too wet, add 1/4 cup breadcrumbs and mix coarsely.

    Start heating half the oil in a frying pan over medium heat.  

    Make 1/3 cup patties and cover with Italian breadcrumbs.

    Fry 5 patties at a time, about 5 minutes per side, until golden-brown, then set aside on absorbent paper.

    Serve with mustard sauce.
